Tasting the Difference: Truffles Fine Foods

The truffle is an epicurean delicacy widely sought throughout Europe, Africa, Asia, and North America. It’s famed for its fragile texture, superlative flavour, lofty price range – and the use of truffle pigs and dogs in its detection. Due to its natural tendency to grow symbiotically with tree roots and richly nitrogenated soil, it cannot be commercially farmed or mass harvested. The aromatic morsels and warmly robust oil they yield are thus treated with only the utmost care and expertise – and savoured most appreciatively.

Eating Locally All Year Long

Grocery mart with aisles of jarred goods and wicker baskets. Other aisles behind. Do you know where your food comes from? One study estimated that in North America, a basic meal travels 2,400 km to get to our dinner table. However, eating locally reduces the distance food needs to travel and the level of emissions and pollution released into the air before it can be put onto our tables. There is also a myriad of benefits to eating locally- not just cleaner air.
